Breakfast

I recently accepted a new work schedule, which I just started this week: Sun->Wed, with Thurs optional depending on workload.

On typical workdays, my breakfast consisted of a (free) piece of fruit (thanks, Intel!) and coffee, which for a breakfast lover like myself, is pretty sad.

To me, breakfast is the ultimate playground for innovation. It’s that time in the morning when you’re peaking in your fridge and pantry, dreaming up an ultimate combo. With an extra day off, it gives me an extra opportunity to create said combo, and I definitely delivered today.

Inspired by a recent NYT article about turning dinner into hash, I decided that last nights shredded beef I made for tacos was definitely making it into some hash. In fact, I decided this as the beef was finishing up last night, which placed somewhat of a damper on my tacos, as dreams of beautiful hash danced through my head.

So, without further ado, I present spicy shredded beef hash.  I apologize if the pictures are a little blurry, but I was shaking with anticipation.  Let’s be honest here: you’re lucky I stopped to take any pictures at all.

Lord knows how many calories are in this, but I do know one thing: I don’t care.

    Pardon my ignorance, but is that sour cream on top? If so, what is that spice (I’m assuming) on top of the whipped-cream like substance?

    Also, I’ve never been quite sure on this: do you boil the potatoes slightly and then fry them? Or does frying alone make them soft enough to eat?

    you can boil them a little bit. i actually microwave them for a little while first, until they just start to have a little give.

    you definitely don’t want to just chuck them in the frying pan, because they’ll take forever to finish (>30 mins).

    Duh, I had a feeling it was going to be something blatantly obvious.

    This is what I get for never having my eggs in any other way than scrambled. I’m guessing that’s pepper on top then?

    I usually chop the potatoes and boil them a little. The easiest way is the just bake extra potatoes for dinner and then put them in the fridge and chop those up and use them for home-fries!

    My secret is to cook the home-fries in bacon fat for extra artery clogging goodness!

    Good call on the leftover baked potato.

    PS – I used home-rendered lard, and it was great. And be careful with your artery-clogging slurs. Pork fat actually has less saturated fat, more unsaturated fat, and less cholesterol than butter.
